Narla Gelen ''Bereket''

Mardin’de sonbahar kendini iyiden iyiye hissettirmeye başladı. Havalar serinledi.

SYMBOL OF ABUNDANCE: POMEGRANATE

The fall started to make itself apparent in Mardin thoroughly. The weather is getting cold. The first rain is just in time. The grapes were picked and walnut churchkhlea, fruit leather and molasses have been prepared by its fermented juice (Şıra). The soil has been ploughed over the plains, the wheat has been planted! Now, it’s time for the pomegranate. The pomegranates on the trees, whose benches touch down the ground from their weight, look red as a ruby and appetizing. Seeing the pomegranates like this, brings these word from my father to my mind: “If the fall is abound with pomegranates and quinces, then the winter strikes hard.” Mark my words, I don’t know about the quince yet but this year there’s plenty of pomegranates here in Mardin. It seems that a tough winter is waiting at the door.

Throughout history the people of Anatolia, whose most significant source of income is farming, have always produced new products from each of the oversupply of products that are being produced in Anatolia, making them undergo specific procedures to make them long lasting. The pantry culture that is widespread in Anatolia has gained even more significance with the production of these products. The pomegranate syrup, which I’m going to tell you about today; that is prepared by boiling the pomegranate juice for a long time to caramelize the sugar in it and to extract the water from it - a procedure that is exacting and onerous - used as flavoring in our salads and meals, plays an important role amongst the food that is prepared in the pantry culture.

Let’s start by telling you about the pomegranate. There are countless benefits of the pomegranate, a sought out fruit in European cuisine as well in recent years. It is a source of Vitamin C and antioxidants; it is being used in pharmaceutical industry, utilized as paint, animal feed, vinegar and such apart from its role on our tables. It’s being said that the pomegranate originated from Iran first and then has spread worldwide. There are various types of pomegranate in every region of our country, especially on the East, Aegean and Mediterranean region of Turkey. In Mardin and in its vicinity, pomegranate types that I think you have started to hear about a lot for the past few years, such as Hedjaz or Zivzik are being grown. Because of soil, watering and sun conditions; our little seeded, thin peeled, scarlet pomegranates are in small sizes, juicy and aromatic.

The picking of the pomegranates which we start very early, actually is the most enjoyable and simple part of the job! The pomegranates are so beautiful, especially the ones who are so grown that the seeds come out from the cracked open peel, you forget about the picking job and start eating them. We have picked up pomegranates all day and I guess we have eaten as much as we have picked them up.

Let’s get down to making of the pomegranate syrup. In order to make the pomegranate syrup, it doesn’t matter whether your pomegranates taste sour or sweet. Here, we use them both. The pomegranates which are picked up from the gardens are divided into two with a knife and are being collected in basins. Then these are beaten up with the help of a mallet or a spoon, separating the seeds from the peel. The pomegranate seeds are put in sugar sag and this sag is placed somewhere high. The pomegranates seeds inside the sag are trampled on with a clean pair of rubber boots and their juice get extracted. Most of the people, after seeing this procedure, might think that it would be an easier job if this was done by a food processor or a citrus juicer. However, let me remind you of the fact that we don’t use any kind of machine so that the white seeds inside the pomegranate arils wouldn’t be severely damaged (since this procedure would rile the juice) and for the metal not to spoil the taste of the pomegranate. As for the citrus juicer; as you know, there’s a white peel inside the peel of the pomegranate that separates the pomegranate seeds from the outer peel and this white peel has a somewhat astringent taste. If this part of the pomegranate gets squeezed along with the pomegranate seeds, the taste of the pomegranate juice would be spoiled. Thereby, it wouldn’t be possible for us to obtain the pomegranate syrup with the taste that we desire.

The most important thing to keep an eye on while extracting the juice of the pomegranates is not to let the juice become in contact with water; because even a drop of water is enough to spoil the juice. The pomegranate juice that is obtained by squeezing the fruit is then filtered via a thin colander. If you ask why, I would tell you that this is because we would like our pomegranate syrup to be clear and tasty; otherwise, the residue that is remained inside would give the pomegranate juice a bitter taste as it gets boiled.
Finally, the filtered pomegranate juice is poured in the copper cauldron and it is left to boil under wood fire. Since the boiling will take a very long time, the boiling cauldron must absolutely be made from copper and it should be thick and therefore resistant to heat. The boiling procedure takes approximately 8-10 hours. It is important to avoid the juice from sticking to the bottom of the cauldron and burn; for this, mixing it constantly is a must. As the pomegranate juice boils, the water inside it is going to evaporate and the amount in the cauldron will be halved. The pomegranate juice is boiled until it gets thick, put in glass bottles after it is cooled down and is let to rest for a couple of days for it to find its texture, then the syrup will be ready for use. Believe it or not but one obtains 1 liter of pomegranate syrup from 10 Kg of pomegranates.
Don’t get the wrong idea about the difficulty of making this, looking at the way I describe all of this in a very simple manner. As I have mentioned before, the preparation of the pomegranate syrup is an exacting and onerous procedure that requires a lot of time and effort.

As for the texture, the pomegranate syrup does not have a wax texture at all! The products, which are being sold under the name of pomegranate syrup and which has a wax texture, are products that have been thickened by glucose addition. A good pomegranate syrup should have a thick Turkish coffee texture. It is fluid, yet it leaves a mark behind when poured down.

Let’s get down to the most important part; you know the hard seeds that we all continue to chew after we have eaten a pomegranate. For me, it is the most precious part of the fruit. This seed protects the body from a bunch of diseases such as cancer, thanks to its antioxidant characteristics. It has an antiviral property, meaning it protects the body from the viruses; its useful content prevents many diseases caused by viruses such as herpes or the flu. The antioxidant effect can be seen not only in serious diseases but also presents itself throughout our body from head to toe. It helps in recovering and renewing of the damaged cells and it especially creates an anti-aging effect on the skin. We should point out the fact that, it should be consumed often in order to balance blood pressure, cholesterol and insulin resistance. You can grind those white pomegranate seeds after they are dried and you can use them in a powder form and pour 1-2 tea spoons of this powder in your drinks, on yoghurt or even in your meals and help yourselves, you will see the benefits of it.

We make use of these white pomegranate seeds as well as its peels. How? We dry the hard peels of the pomegranate and during winter we prepare a tea by brewing them with quince and cinnamon. I can say that it is a fantastic remedy for the flue and coughing. We give the excess hard peels to the villagers. (The paint that is obtained by boiling these peels is being used in coloring the felt and carpet yarn)
To conclude, I think that now you see why the pomegranate is used to symbolize abundance; a fruit that we make use of its fruit, juice, peel and seed separately.

Gaziantep Peyniri

Gaziantep Cheese
Thanks to @demetdogdu, a great contributor in learning the food culture in Gaziantep as  I met with Gaziantep cheese. In the life of a person there must be best friends , a few of them do not pass a few, so Demet is such a friend for me. Gaziantep means Demet, Demet means Gaziantep for me! I learned a lot from her and her mother who made wonderful meals  their cultures. Unfortunately, I could not find the taste and quality of any of the local dishes I ate at home. Demet taught me the Bazaar, the curiosity, the products, the dishes and the stories of the meals. Among the things I learned was perhaps Gaziantep cheese which we ate with the most pleasant pleasure. Every year during the lambing period of the lambs, when the pollen and the cheese are made, the cheese time in Gaziantep starts in February and March. When you walk around the bazaar you will see these cheeses when they are sold in small bags in transparent bags. This cheese made with traditional methods is made from sheep or goat milk and is very oily and thick. This cheese, which is one of the food culture habits of antiquity, is mainly used for breakfast and for making dessert.
Gaziantep cheese is not as soft as fresh Mardin cheese, nor is Antakya künefe as fluffy as cheese. It has its own flavor and consistency. The quality of the used culinary herbs is one of the most delicious cheeses in the region due to differences in processing. The use of different flavors of spices such as mint and tarhun in the production phase is the most important reason for the difference in taste. When the cheese is salted and pickled, the cheese is prepared in winter. I prefer cheese made from pickled milk, especially from sheep milk. I fill the cheeses with a glass kavano and add the brine water on top. How do you do the brine water I feel your voice. I put 1 measure of rock salt in 15 parts of water and boil it. To measure the amount of salt, it is enough to throw an uncooked egg into the boiling water. If the egg falls to the bottom, the salt is less. If the egg is on the surface of the water, the salt is complete. I have always been successful at the level I gave. I put it in a cool place, putting a jar of cabbage to cover the cheeses completely, letting the jar cover the air, after we had cooled the brine. As culd seen everywhere in Gaziantep bazaars, I know that it is very difficult to reach in city kitchens so naturally. But as I always say, insist on finding a local manufacturer in city life. If the producer sells the product, the business will continue. If he wins, his children will keep same job. We also have a healthy product.

Tooth Wheat "Hedik"
One of the rituals of rich life culture of Anatolia, tooth wheat is known as 'hedik' with the oldest known name. In the period between the beginning of life and the continuation of life, The renewal of the family and the participation of a new individual to the family for the descendants is a happy occasion for everyone. It is the first ritual of the birth of a newborn and the life of a human being who takes part in life as an individual by showing different development each new day! The baby develops every day after birth and becomes involved in life. The first tooth is the first bread to be eaten, the first to be eaten, the first for human beings.
The tooth wheat ceremony starts with the announcement of this eye lightening to the subject neighbor and close relatives, after the baby's first cut a tooth. This is a good news shared with everyone about the future of the mother's lap. This ceremony, which is held with close relatives and neighbors coming together, begins with the reception of the guests. Care is taken to ensure that the table is rich because it is the hospitality of the guests who believe that the baby is the table to share his first meal. The richer the establishment, the greater the abundance of futurists will be believed to be in the future.
The first item of baby's first food hedik, prepared by baby's mother and shared with the guests, is the first material. I mean, it is the bread that will be the cornerstone of life throughout life.
Wheat is boiled and the first cooked wheat is fed to baby. Then, with the materials inside, the meaning is enriched and presented to the guests. Pomegranate, walnut, almond, cumin, sugar, grapes, colorful candies and Turkish delights. Each one has a meaning. Pomegranate is  wishes for children to have a big family. Walnut; wealth, almonds; mouth taste; health, sugar; eye brightness, grape; abundance, colorful candy and delights; It represents a peaceful and happy life. The hedge poured into a cloth stretched over the head of the baby is a symbol of a life full of these wishes. In addition, pencil, notebook, book, scissors etc. left in front of baby. This mean as a wish of  the baby's bread is kept by the bread, same as first cut of teeth. Therefore, the thing that the baby chooses from the things that are put in front of the baby together with the hedge that is spilled on his or her head is the wish of his or her  future profession. For example, it is believed that the child who holds the pencil will be the engineer of the child who holds the scissors will be tailor.
In the most special ritual of color anatolian culture, human life begins with wheat. Wheat is at the forefront of all future wishes.

Misafirle gelen bolluk bereketin çoğalmasına, sağlık ve göz aydınlığına vesile olmasına niyet edilerek hazırlanan rengarenk keseler içerisine konulan her şey hayata dair iyi temennileri sembolize eder.

Mardin is undoubtedly one of the places where the rich life culture in Anatolia and the most special form of social life rituals are experienced. The Mardinian continue to reflect the social life of Mesopotamia centuries ago. Entertainment culture is the most specific culture that determines social life. The culture of the big pensioners, where the big families live, is a  spencer. October is the time to fill in the storage of your family's seasonal food needs. After the harvest of grapes, the collection of walnut, the breakage of the almont, the boiling of the bulghur, the preparation of tarhans and dryers are always in October. The last time olives are broken, sweetened, and sausages (traditional name is Şeredin) are made. The time passing to fulling the spencers is fun and abundant. During this time, silk pouches are offered to guests in order for protection from evil eyes.
Everything that is put into the colorful pouches prepared with the intention to increase the abundance and abundance of the guests and to be the instrument of health and eye illumination symbolizes the good wishes of the life. The pouch in which the gifts are placed, should be very colorful. For a wish to a happy life.. White is never used in the scenes because it symbolizes death in Mardin. Pomegranate given with pouch; symbolizes Family, Walnut in Pouch; symbolize  richness, almont;  taste, Brass; proliferation, Sugar; eye lighting, Ciregot; health, Grape; blessings symbolizes.
In addition to this, molasses prepared in a bowl will be presented so that the grape is a difficult fruit. It takes a long time and effort to be boiled and boiled into molasses. After this hard work, grape molasses has become a sweet and delicious product. This is why temples are the tastes of sweet potatoes that every person in life demonstrates. Salt is also believed to be a part of life's cycle of suffering. However, it is taken care that the salt is less than anything else that is put into the living representing bundle. The colorful "Abundance Pouches" offered to the guests after dinner by the hosts is a continuing affair in Mardin where the most beautiful places of the houses are hung on the doorsteps in order to encourage the good and the better.

LIVING SOIL LOCAL SEED!
Just two generations ago, everything was even better. The concept of organic products, which we are all in search for now, was not known because of everyone was producing and feeding organic. There were no agricultural products that were measured by imported and exported tones from abroad. The locals were producing in accordance with the seasonal conditions and were selling in local markets. Even in schools there was a concept called vegetables-fruits that were produced according to the seasons taught in lessons. I do not know if it still exists. How easy it is for children to be able to distinguish these concepts at a time when we can always find what they want. We lived in such a crowded world, and simple farming methods were enough to feed people at that time.
Now, the people of the world are satisfied with advanced agricultural technologies. But now, not only climate events, but also the state's agricultural policies, scientific progress, and global trends have now become a matter of land. We are consuming and consuming away day by day with all these reasons! Turkey has been a fertile area for agriculture throughout history. When we look at the Anatolian lands, we can speak from a rich geography with different geographical features, different altitudes, winds, precipitation and soil cultures, which are dominated by four seasons. Depending on these conditions, we are at the forefront of the world's most biodiversity-rich countries. More than 10000 of  biological diversity, which is about 4000 of them is endemic.
The diversity of our land, as well as the ethnic diversity of our population, are so great that they offer us! We have a seed culture that has been formed in Anatolia in 8000 years. According to the archaeological excavations at Cretaceous Tepe excavations between Batman and Bismil, 13000 years ago, Anatolia was the motherland of wheat. The genes of the wheat seed have grown naturally in our soil.
But the balances on the Earth, and the supply-demand situation, also shape their preferences. The farmer no longer sells the crop he has produced to the people of the small villages by going to the villages near the villages. Agriculture is also global. In a short period of time it would prefer to plant seeds with high yield. Vegetables and fruids have set world standards. Size, color, odor are connected to standards. The farmer who is exported to other countries of the world has to respond to these demands in accordance with the nature of trade. In this way, he/she chooses programa bread, which will win in remote markets and has high productivity. The preference of farmers, who are also directed by exporters, is in favor of the hybrid seed.
We will harvest what we plant! However, when we combine our seeds with our soil, we can reach the real and healthy product. With our "Living Soil, Local Seed" project, we aim to support small farmers who produce with local seeds in Southeastern Anatolia and to make sustainable production with indigenous seeds, to protect land and nature. We are reaching out to the small farmers who produce locally with my female farmer engineers who put their heart to this project. We are looking for ways to identify and improve production mistakes made in the soil. We inform the farmer. We are harvesting the produce of the local seeds. (We started to work on these products to reach you, we will announce them soon). It must be a taboo! In this sense, if we work with the land that provides us with food and the farmers who process it, we can take both  our earth and our people alive. If the farmer earns money, he will not give up his land, and the children will continue this work..
Local seed; abundance of earth, means as healing to us and our children' future!

Mardin'in' bereketli topraklarından, zengin sofralarına dek uzanan bir serüvenin öyküsü onunkisi.
Her yıl ekim ayında buluştuğu Mardin'in sert iklim şartlarında kendisine yarenlik eden bereketli ova toprağına sıkı sıkıya tutunup, kök salıp, yeşerip, boy vererek dolgun buğday başaklarıyla, doğadan aldığını cömertçe geri verme telaşı içerisinde Mezopotamya'nın, Mardin'in kehribar sarısında yerini alma çabası ve ardından ateşle buluşup taş değirmenlerde öğütülerek sofralarla  buluşma hikayesi...
Buğdayın Nemlendirilmesi İle Elde Edilen Bulgurlar;

MESOPOTAMIA, THE NINTHROUGH RIVER GIRL "BULGHUR "

Mardin Durum Wheat
The little girl loved the sky. When she lifted her head, she could gaze at the blue sky, which made her feel eternal, and the whole globe, where she could not see. Mardin, which admired her every day with its beauty, and sky is so close to each other; she could go all the way around without a tip to the whole of Mesopotamia. Golden hair on both sides, which is released by the blow of the wind, and the golden hair of Mesopotamia, which is decorated in the sun rising on its chest every morning.
It is a story of an adventure that stretches from Mardin's fertile land to rich sofras.
The procession of Mardin kitchen culture, the dominant material until the bulghur, is that the state wheat produced in the brightest sun of East rising in Mesopotamia's fertile soil and chest has been mixed with many religions and cultures for centuries and past seven thousand years of coexistence.
Every year in Mardin, where she meets in October, she grabbed the amber yellow of Mezopotamia and Mardin in a hurry to return to her generous grace by holding firmly to the fertile plains of her harsh climate and giving her roots, flourishing, struggle and then meet with fire and grind in stone mills and meet meals..
Bulghur at Mardin
When I tell Mardin' s Bulghur, I think it is necessary to talk a little bit about how bulghur is used. It is surprising to hear that it is strange, but many people do not know that the find is obtained by milling wheat, Anatolia's oldest agriculture and grain product. Knowing the nutritional values, from what buckwheat to which buckle is best, to how it is done, I think that a good bulgur story is actually going to be good for everyone.
The wheat plantation starts in October in our country and the harvest is finished in mid-June at the latest. The harvested wheat is washed and leaves its shell from its soil. Bulghur, the preparation of wheat is prepared in two different ways according to the shape and accordingly different names.
Bulghur made with boiling of wheat; In our surroundings, wood is boiled in the fire with water added to cover the wheat, which is placed in copper and huge boilers called "nikra". The boiling wheat is pulling the water and it blows up the envelope that surrounds it. The wheat thus leaves the starch in its contents to the water. When cooked, wheat water is mixed continuously and then drained on large cloths in the dams and dried in the sun. Dried wheat is milled in hand-turned stone mills. The bulghur taken from this wheat is ordered according to the paint it is given; large pilaf, Midyat, cigkofte bulghur is called.
According to this, we can say that the bulghur obtained from boiled wheat is a bulgur group prepared as pilaf.
Bulghur can obtain without boiling by moistening wheat. The wheat is kept in hot water until it softens. Because wheat is only moisturized, it does not explode and keeps the starch inside. Well-soft wheat is spreading to the dry in the sun. The wheat is ground after it is dried and it leaves behind when it is ground. Splitting this wheat into its pre-ground state; it is called huge bulghur. Then again, according to the color of the bulgur; It named as  big kitel, kitel, vs. in Anatolia . We need to emphasize here, the bulghur durum wheat. the smallest size is semolina when it is grinded, and the flour is wheat when bread wheat is grinded. Especially when mixed with water only Kitel bulgur which is doughy consistency is used in the inner some meals and some soups in the local culture.
Bulghur is a rich source of vitamins and minerals. Bulgur is a healthier, higher carbohydrate grain with less calories because it is made only of water and wheat. Because bulgur contains folic acid, it is recommended that both children and pregnant women consume. The bulgur, which does not contain cholesterol, has a very long life span, especially when it gets rid of it. Glycemic index is low, it gives a long feeling of satiety. It is good to our gastrointestinal system with its friable structure and to our nervous system with the B vitamins it contains.
Do you know that Turkey's Best Durum Wheat GROWING ON MARDIN KIZILTEPE ?

The best bulghur; obtained from durum wheat. Bread wheat has a softer structure than durum wheat, the starch ratio is high and the protein ratio is low. Bread wheat easily swells when it comes into contact with water and it becomes difficult to digest. The bulghur obtained from durum wheat has high protein and low starch. The digestive tract is shorter than the others due to its hard and fibrous structure. According to soil structure and climatic conditions, the best condition of Turkey is grown in Mardin Kızıltepe rind of wheat.
